Ingredients:
1/2 cup potato chips, crushed finely
1/4 cup panko bread crumbs (Japanese-style)
4 salmon fillets (approx. 6 oz each)
1 tsp olive oil
1 Tbsp Dijon mustard
salt and pepper

Set oven to 'high' broil. Line
rimmed baking sheet with aluminum foil.
In a small bowl, combine potato
chips and bread crumbs.
Rub olive oil onto salmon fillets.
Place on foil-covered baking sheet. Sprinkle
with salt and pepper.
Broil for 9 - 10 minutes.
Remove from oven and check fish for doneness.
If needed, place back in to broil for longer;
be sure to check doneness about every 1 - 2 minutes.
Carefully spread the Dijon mustard
over the fish fillets and press chip/crumb mixture
on top.
Place back in to broil until crust
is golden brown; about 1 minute.
