Ingredients:
2 cups panko bread crumbs
(these are much coarser than traditional dried bread
crumbs)
1 packet onion soup mix (1 oz)
1 tsp paprika
Dash of pepper
½ cup Dijon mustard
2 Tbsp water
2 lbs fish fillets (tilapia and cod both work well)
6 Tbsp butter, melted

Preheat oven to
425 degrees. Line a rimmed baking sheet with
aluminum foil and spray with cooking spray. In
a small bowl, mix bread crumbs with soup mix,
paprika and pepper. In another small bowl, mix
mustard and 2 Tbsp water. Spread flour onto a
plate. Dredge both sides of fish with flour,
then coat with mustard mixture and dredge through
bread crumbs. Place on prepared baking sheet.
Drizzle with melted butter. Bake for about 10
– 12 minutes, turning halfway through cook time.
Depending on the thickness of the fish, it might be
done quicker or might take longer. Fish will
be done with it flakes easily with a fork.
