INGREDIENTS:
1/2 cup graham
cracker crumbs
1/4 cup & 1Tbsp sugar
1Tsp margarine, melted
8 oz pkg cream cheese, softened
1 1/2 tsp lemon juice
1/2 tsp vanilla
1 egg

Preheat oven to 325º.
Cream together 1 Tbsp sugar, margarine and graham
cracker crumbs.
Press rounded
tablespoon full
of crumb mixture into bottom of 6 paper lined muffin
cups.
Bake for 5 minutes.
Combine
cream cheese, 1/4 cup sugar, lemon juice, and
vanilla until well blended. Blend in egg.
Fill each muffin cup about 3/4 full.
Bake for 25 minutes.
Cool before
removing from pan. Chill for about one hour
before serving.
