LOADED MASHED POTATOES Ingredients: ˝ cup onions, diced Bring a large pot of water to boil and add the potatoes. Boil until tender (about 20 minutes). Heat olive oil in a small skillet and sauté onions and garlic until tender. Preheat oven to 350 degrees. Drain potatoes and place in large bowl to mash. Add onion mixture, sour cream, ˝ cup cheese, butter, milk and salt / pepper to potatoes as mashed. Spoon potatoes into a greased casserole dish. Top with remaining cheese. Bake for 8 – 10 minutes, until cheese is melted. |
