Lemony
Broiled Fish
Ingredients:
1/2 cup butter, melted
1/4 cup lemon juice
2 cups fresh bread crumbs
1 Tbsp chopped parsley
½ tsp paprika
1 pound fish filets (cod and tilapia both work well)
Combine butter and lemon juice. In separate bowl
combine bread crumbs, parsley and ¼ cup of the lemon
mixture. Add paprika to the remaining lemon
mixture. Dip fish into paprika lemon mixture.
Broil until fish flakes easily with a fork. Top
with bread crumb mixture and return to broiler until
lightly browned on the top.
