Ingredients:
1 medium spaghetti squash
½ cup water
3 Tbsp butter or margarine
¼ vegetable broth (can use chicken broth)
1 tsp thyme
1 tsp oregano
salt and pepper to taste
*****
Preheat oven to 350 degrees.
Cut squash in half
lengthwise (be careful as they can be difficult to
cut). Remove the seeds.
Put water in the bottom of
a baking dish and put the squash in cut side down.
Cover with foil and bake for about 1 hour.
Remove
squash from the oven and allow it to cool slightly
while you put together the sauce.
Combine butter /
margarine, broth, thyme and oregano in a small
saucepan until heated through.
Use a fork to shred
the spaghetti squash into strands and place in large
bowl.
Pour sauce, salt and pepper over and toss to
coat.
Serve with parmesan cheese to sprinkle on
top, if desired.
