Hamburger Stew w/ Mashed Potatoes

Ingredients:

½ lb ground beef
¼ cup onion, chopped
1 cup mixed vegetables (canned or frozen)
1 can diced tomatoes, drained (14.5 oz)
1 jar beef gravy (12 oz)
dash of pepper
1 cup water
2 Tbsp butter or margarine
1 tsp garlic salt
½ cup milk
1 ½ cups instant potato flakes
1 Tbsp parsley, chopped (fresh or dried)

Brown ground beef and onion in a large skillet over medium-high heat.  When cooked thoroughly, add mixed vegetables, tomatoes, beef gravy, and pepper.  Mix well.  Bring to a boil then reduce heat to low and simmer for about 10 minutes, stirring occasionally. 

Bring water, butter and garlic salt to a boil in a medium saucepan.  Remove from heat and add in potato flakes, milk and parsley.  Mix well.

Serve hamburger stew over the potatoes.
