Ingredients:
3 cans green beans (French cut works best)
½ cup butter
1 onion, diced
1 can cream of mushroom soup
8 oz grated cheese (cheddar is preferable)
About 20 crushed Ritz-style crackers

Drain 2 cans of the green beans but leave one can
with the juice. Pour all three into a large pan and
cook for about 20 – 30 minutes (until softened and
breaking down some).
Melt butter in saucepan and
sauté onions until tender.
Preheat oven to 375 degrees. Spray a 2 – 2 ½
quart casserole dish with cooking spray.
Empty
green beans into prepared dish.
Strain butter from
onion (keep the butter for use later!) and place
onions on green beans. Spread cream of mushroom
soup over the top. Sprinkle with grated cheese then
crushed Ritz crackers. Pour drained butter on top.
Bake for 25 – 30 minutes.
