Eggplant Alfredo

Ingredients:

1 large eggplant, peeled and thinly sliced
2 eggs, beaten
2 cup Italian seasoned bread crumbs
1 jar of Garlic Alfredo sauce
1 cup mozzarella cheese, shredded
½ cup parmesan cheese, grated
1 tsp dried basil

Preheat oven to 350 degrees. 

Dip eggplant slices into egg then coat with bread crumbs.  Place on a baking sheet and cook for 5 minutes per side.

Coat the bottom of a 9” x 9” baking dish with garlic alfredo sauce. 

Place a layer of cooked eggplant slices on the sauce.  Sprinkle with half of the mozzarella and parmesan cheeses.  Top with remaining sauce, another layer of eggplant, and the remaining cheeses. 

Sprinkle with basil.

Bake for 25 minutes or until top starts to brown.
