Dijon Salmon

Ingredients:
4 salmon fillets (about 6 oz each)
1/3 cup Dijon mustard
2 garlic cloves, chopped
1 red onion, thinly sliced
1 tsp dried tarragon
Dash of salt and pepper

Preheat oven to 400 degrees.  Spray a 9” x 13” baking dish with cooking spray.  Arrange the salmon fillets in a single layer in the pan.  Coat the fillets evenly with the Dijon mustard.  Place onions and garlic on top of the fillets.  Sprinkle evenly with tarragon, salt and pepper.  Bake for about 20 minutes (fish will flake easily with a fork when done).
