1/2 cup graham
Preheat oven to 325º. Cream together 1 Tbsp sugar, margarine and graham cracker crumbs. Press rounded Tablespoon full of crumb mixture into bottom of 6 paper lined muffin cups. Bake for 5 minutes.
Combine cream cheese, 1/4 cup sugar, lemon juice, and vanilla until well blended. Blend in egg. Fill each muffin cup about 3/4 full. Bake for 25 minutes at 325º. Cool before removing from pan. Chill for about one hour before serving.
